The Angels share
The Angels share is not just restricted to whisky maturing in wooden barrels, here at Borges in Funchal, Madeira a barrel of Malvasia is gently and kindly sharing some of HM Borges fine wine. Evaporation is an important part of the maturation process of Madeira wines as they gently warm through in the warehouses dotted around Madeira. Age and wood matter and evaporation assists in the development of the flavour of the wines. As you can see from this image the casks and barrels in use are of considerable age and this also imparts flavour into the HM Borges Madeira wines.
